Gidgee Apexultra Sanmai Chef Knife
A stunning hand forged san mai chef knife . The core is apexultra carbon steel and wrought iron from an old wagon wheel as a cladding. There is also a thin layer of nickel between the layers . San mai is a Japanese sword making technique that allows for a hard steel core that stays sharp and the softer jacket either side allowing for some flexibility.
Apexultra is a new alloy of steel developed specifically for knife making, it is very hard around 65 rockwell while also being tough ( not brittle)
The handle is made from gidgee timber with copper and G10 spacers
Blade length is 230mm ( 9 inches) and its 49mm deep at the heel. overall length is 395 mm . the spine is 2.8 m wide at the heel with a distal taper to less than 1mm near the tip . Weight is about 216 gm nice balance
